I love summer, especially when I can add fresh summer berries to recipes. The colors are so vibrant and just make everything look so delicious. Since I have a dairy allergy, I cannot eat traditional yogurt but I wanted to create a parfait recipe that was just as enjoyable – Here is my berry vegan parfait recipe, scroll down for all the instructions!
Start off by gathering all of your ingredients: vegan yogurt of choice, 1 cup fresh strawberries, 1 cup fresh blueberries, candied pecans (my easy recipe for them here), agave (or honey – nonvegan), a lemon. You can find the cutie mini mason jars here.
Slice the strawberries and put a layer on the bottom of the mini jars.
Next, add a layer of yogurt to your vegan berry parfait.
Then add a layer of blueberries.
Layer another dollop of yogurt.
Then add candied pecans,your favorite granola, or both!
Next, add color to the top with blueberries and another strawberry slice.
Finish it off with a drizzle of agave or honey (if not vegan) and a little lemon zest. Trust me on the lemon zest, it makes all the difference. You can find my zester here.
Make the night before or serve for a light dessert! ENJOY!

Vegan Berry Parfait Recipe
Ingredients
- 1 cup vegan yogurt
- 1 cup sliced strawberries
- 1 cup whole blueberries
- 1/2 cup candied pecans or granola
- 4 TBSP agave or honey (non-vegan)
- Zest of one lemon
Instructions
Set out your mini jars and add a layer of strawberry slices on the bottom of each jar
Add 1 TBSP of yogurt on top of the strawberries in each of the jars
Add 7-10 blueberries on top of the yogurt
Add 1 TBSP of yogurt on top of the blueberries
Add 1 TBSP of candied pecans or granola on top of the yogurt.
Top with leftover blueberries and a strawberry slice for color.
Drizzle with agave and finish with lemon zest

Can be made ahead of time and store in the refrigerator for up to two days.
