The 4th of July is coming up and that means backyard barbecues and poolside picnics. Along with the traditional hot dogs and hamburgers, you might be looking for a vegan dish that will be a homerun! Here is my vegan spinach and berry salad recipe that is perfect for summer, scroll down for all the instructions.

Spinach and Berry Salad Recipe

Start off your spinach and berry salad by gathering your ingredients: 1 cup of fresh strawberries cut in slices, 1 cup of blueberries, spinach, diced red onions, candied pecans, and homemade salad dressing. The beauty of this recipe is you can add more or less of the ingredients depending on your preference. You can find my recipe for candied pecans and homemade salad dressing here.

Add the spinach to a large bowl and then add the sliced strawberries on top.

Then add the blueberries and candied pecans.

Vegan Spinach and Berry Recipe

  • Yield: 6 Side Salads
  • Prep Time: 5 minutes

Ingredients

  • 1 cup strawberries
  • 1 cup blueberries
  • ½ cup candied pecans
  • ½ cup red onion
  • 4 cups spinach
  • ½ cup salad dressing

Instructions

  1. Add 4 cups of spinach to a large bowl.

  2. Layer 1 cup of strawberries, 1 cup of blueberries, ½ cup of candied pecans, and ½ cup of red onion on top of the spinach.

  3. Add ½ cup of salad dressing on top of all ingredients.

  4. Finish by tossing all of the ingredients together and serving.

Notes

If you’re making this salad ahead of time, avoid adding your dressing until you plan on serving it.
