This yummy little number is a different take on my chopped greek salad and even regular pasta salad. One of my favorite things about it is that it uses cheese tortellini. YUM!!! It's perfect for these hot summer days where you want something chilled and with a fresh flavor.
Start by preparing the cheese tortellini according to the package instructions. When the pasta is finished cooking, drain it in a colander and immediately toss with cold water to stop the cooking process.
While the pasta is cooking, its a great time to start all of the chopping. Chop one small cucumber, half of a red onion, one bell pepper, two Roma tomatoes, and 1/8 cup of pitted Kalamata olives.
Next, start layering. Start with the pasta on the bottom. Then add the veggies and 1/4 cup of feta on top.
Now its time to make the homemade greek dressing. It is ¼ cup extra virgin olive oil, 4 TB red wine vinegar, 1 TB of Herbs de Provence and 1 tsp of oregano. This dressing has tons of flavor but no added sugar or sodium.
Mix them all together and pour over the pasta salad.
Finally, combine all of the veggies, feta, pasta, and dressing!
SALAD INGREDIENTS
1 Family sized package of Cheese Tortellini
2 Roma Tomatoes
1/4 Cup Feta Cheese
1/2 Red Onion
1 Cucumber
1 Red Bell Pepper
1/8 Cup Pitted Kalamata Olives
DIRECTIONS
1. Wash all of your ingredients.
2. Cook Cheese Tortellini according to package instructions then rinse with cold water.
3. Chop and combine the other ingredients and place in bowl with pasta.
4. Pour dressing over the top.
5. Incorporate the dressing into the salad.
6. Serve immediately and enjoy!
DRESSING INGREDIENTS
1/4 Cup Extra Virgin Olive Oil
4 TB Red Wine Vinegar
1 TB Herbs de Provence
1 tsp Oregano
DIRECTIONS
1. Mix ingredients together.
