Instant Pot Spinach and Tomato Chicken Recipe

When it comes to dinner in our house, I either feel like being a gourmet chef and want to spend hours in the kitchen or I literally want to spend ten minutes. There is NO in between.  That's why I am obsessed with my instant pot.  It only takes ten minutes to make me seem like a kitchen hero.  I rencently shared this Instant Pot Spinach and Tomato Chicken Recipe on my Instagram stories and wanted to share here as well.  So here ya go folks, lazy lady's Instant Pot Spinach and Tomato Chicken Recipe.

Place four boneless skinless chicken breasts at the bottom of your instant pot.

Next, pour 1/2 cup of zesty Italian dressing on the top.

Then, pour 1/2 cup of chicken broth over the top. I LOVE it with my homemade chicken bone broth. 

Now, cut up 7-8 sun-dried tomatoes over the chicken.

Add about a cup of baby spinach or a little more if your heart desires.

Finally, add 2 teaspoons of Italian seasoning and 3-4 cloves of garlic. (In my opinion, you have to measure that garlic with your heart, add as much as you want)

Give the mixture a good stir.

Make sure your Instant Pot is set to seal.  (obligatory follow the manufacturer's instruction comment so that I am not liable if you have an Instant Pot mishap)

Set your instant pot for high pressure for 10 minutes. While your chicken is cooking start on your base for the chicken.  I love it with gluten-free pasta or rice.

After the timer has completed on your Instant Pot, quick release the pressure. Carefully remove the lid and give the chicken a stir.  Optional: break up the chicken into bite-sized pieces, it should be very tender.

Next, if you are serving it with pasta pour in your favorite pasta and stir around so that the pasta can absorb the liquid. 

Serve and garnish with fresh parsley.

  • 4 Boneless Skinless Chicken Breasts
  • 1/2 Cup Italian Dressing
  • 1/2 Chicken Broth or Bone Broth
  • 7-8 Chopped Sun-Dried Tomatoes
  • 1 Cup Baby spinach
  • 2 tsp Italian Spices
  • 3-4 Cloves Minced Garlic
  • Optional: Gluten Free Pasta or Rice to Serve Over


  1. Add all ingredients to the pot except pasta or rice and stir.

  2. Follow manufacturers instructions on Instant Pot and make sure your pressure valve on your instant pot is set to seal.

  3. Turn your instant pot on to high pressure for 10 minutes.

  4. Once the timer has completed, quick release the pressure.

  5. Stir the mixture together and cut the chicken into bite-sized pieces.

  6. Pour in your favorite gluten free pasta or serve over rice.

  7. Enjoy!
