Y'all know I LOVE a good coffee recipe, especially one that I can make at home and that is dairy-free. Winter is all about being cozy by the fire and the occasional snow day, so I wanted to make a warm toasty beverage that reflected this feeling! Progress doesn’t need to be extreme to be meaningful. Small choices can lead to big change! Silk® Almond Creamer is Gluten-Free, Dairy-Free, Vegan and has a smooth taste. Including more plant-based foods into your diet is a great way to start the new year and get you on the right track for your goals. To make this recipe, start by coating the rim of your favorite mug with melted chocolate. There are great dairy-free chocolate chips that you can melt using a double boiler. Next, coat it with your favorite graham crackers. I use gluten-free ones. You can also find low-fat varieties. Now that the mug is prepared, it's time to add the liquid ingredients. Optional: Add 3 teaspoons of store bought toasted marshmallow syrup. (If you want to make your own toasted marshmallow syrup: melt one cup of sugar in one cup of water on the stove, then add 10 large marshmallows and 1 tsp vanilla extract. Stir until combined and fully dissolved).Next, add one cup of your favorite brewed coffee or espresso. Then add about 1/4 cup of Silk® Sweet & Creamy Almond Creamer. If you are feeling really fancy, you can heat the creamer with a milk frother to make it fluffy and stir it all in together. I love Silk® Sweet & Creamy Almond Creamer because I can count on it to be gluten-free and vegan; it makes my coffee smooth and creamy as well. If you are feeling just a little bit extra, you can add a super fun garnish of an actual toasted marshmallow. Because I am not one for venturing out in the cold just to be around a fire, I like to break out my handy dandy creme brûlée torch for the task! I may have had a little too much fun with this. Don't worry there was a fire extinguisher sitting very close by. Finally, set the *toasted* marshmallow on top of your coffee, think warm/fuzzy thoughts, and enjoy your creamy winter wonderland in a mug!
