Fall is a busy time for everyone. Either your kids are headed back to school or, in our situation, every client wants to have a meeting and we are constantly on the road. Carving out time to spend together is important and we do that around the dinner table. When life is pulling us in a million different directions, I rely on my quick and easy meals that don’t require a lot of attention. One of my favorite three-ingredient recipes is my Spunky Croc-Pot Chicken.
Start by peeling and slicing the onions.
Next, layer on a level of onions in the bottom of your slowcooker.
Now add the chicken breasts on top of the layer of onions.
Then, add another layer of sliced onions on top of the chicken breasts.
Now it’s time for the yummy stuff. Dump an entire jar of salsa on top. I mean, this stuff is good on anything other than ice cream. I use the medium chunky salsa but feel free to use the mild to make it more kiddo friendly.
This is the best part. Set it in the slowcooker on high and forget about it for four hours! You can also do it on low and cook it for eight hours instead.
After the Spunky Crock-Pot Chicken has cooked, you have a couple of options. You can serve it with tortillas as a chicken taco of sorts OR you can serve it over rice. I like to add a few optional toppings like cheese, avocado, and cilantro and then serve it over yellow rice.
Finally, it’s time to enjoy a wonderful home-cooked meal and time with family!
Spunky Crock Pot Chicken
Ingredients
- 2 Large Sweet Onions
- 4 Boneless Skinless Chicken Breasts
- 1 Jar Pace® Salsa
Instructions
Slice onions and place a layer on the bottom of the crock pot.
Place chicken breasts on top of the layer of onions.
Add another layer of onions.
Dump the jar of Pace® Salsa on top of the onions and chicken.
Place in the crockpot and cook on high for four hours OR cook on low for 8 hours.
